Thai Basil Eggplant
From The 30 Minute Vegan's Taste of the East (Serves 3-4 as a main dish) 1 tablespoon sesame or safflower oil 4 cloves of garlic 1 to 2 red chile peppers, minced (optional) 2 medium eggplant, chopped, about 6 cups 1 1/2 cups of water 1 tablespoon agave nectar 2 tablespoons Bragg's Liquid Aminos or soy sauce 1/4 to 1/2 cup basil, preferably Thai basil if available I always 'sweat' my eggplant first by sprinkling the cut up pieces with salt and let sit for at least 15 minutes.
