Quinoa with Mixed Vegetables (Monk Bowl)
This recipe can be used as part of a cleanse.Make it ahead of time and serve as needed.
Serves 4
1 1/2 cups cooked quinoa
3 cups of water or stock (vegetable, chicken, beef, etc.)
8 cups of assorted vegetables- try broccoli, carrots, zucchini, cauliflower, snow peas, purple cabbage, bell peppers, green beans - whatever looks good and fresh at the store.
1. Place quinoa in a pot with 3 cups of water or stock. Bring to a boil, then simmer for 15 minutes until all the water is absorbed.
2. Add 1 inch of water to a medium pot with a steamer basket. Turn to medium high heat. Cut up your vegetables of choice and steam until tender, about 8 minutes, depending on the vegetables.
3. Place quinoa in a bowl, top with seasoned vegetables, and season with salt, pepper, flax oil, nutritional yeast flakes, soy sauce, etc.
-You can also saute or stir the vegetables with olive oil or coconut oil and mix and match flavors with seasonings and fresh herbs. Experiment and have fun!
